One hive is a good start and it depends on what your goals are to determine how many hives you need or want.  Most information states that you should have two hives per acre for proper pollination.  If you are wanting bees for pollination then you can determine how many hives you should have by how much land there is to pollinate.  Most hives in New Mexico will produce about 40 pounds of honey after the second year or with good feeding before the nectar flow starts you could get more and sooner.  So if you are after honey production this gives you an idea of what you need depending on how much honey you want to harvest.  If you are having bees just for the pleasure one hive is just fine.  I myself actually started out with two.  It is nice to have a second hive if you need to requeen or just for comparing.  If I can be of further assistance please let me know.

Tracy,  I live in Rio Rancho (Enchanted Hills) just west of Bernalillo.  It is possible to have bees in Placitas.  There are some things to consider.  I would be happy to help with your questions.  Let me know how I can help.  bigskyhoney@gmail.com
